Doughnuts as so popular for weddings. Couples are creating doughnut walls, giving doughnuts as wedding favors, and showcasing them at brunch weddings. So of course, I had to make homemade banana doughnuts. For this post. Not because I want to have a dozen doughnuts in our house, but the sacrifices we make.
Homemade Banana Doughnuts With Chocolate Shell Wedding Favors
They were actually pretty simple to make, so I'll probably end up making them all the time. I used my banana bread recipe (without the chocolate chips) to make the doughnut batter. Head over here to grab my recipe, then come back to continue.
What You'll Need:
For the doughnuts:
- Banana bread recipe, without the chocolate chips, doubled
- Doughnut pan and mini doughnut pan
- Wire rack
- Pat of butter
For the shell:
- 1/2 cup chocolate chips
- 1 tablespoon coconut oil
What You'll Do:
Pre-heat the oven to 350.
Make the banana bread mix, without the chocolate chips.
Use the butter to generously grease the cavities in the doughnut pans. I used non-stick doughnut pans, but I still greased them because I really wanted to assure they held their shape.
Fill the cavities with dough. For the regular sized pan, filling 3/4 of the way (up to the top of the center piece) works best. For the mini doughnut pan, filling 1/3 of the way was best. I filled most about halfway and those lost shape completely after baking. They still tasted great, but they didn't look good.
Bake for ten minutes.
Remove them in the oven and let them sit in the pans for five minutes. This is so important. If you wait, they will pop out so easily. If you don't wait, they will crumble.
Leave them on a wire rack to cool while you make the chocolate shell.
To do that, combine the chocolate chips and coconut oil in a microwavable bowl. Microwave on high for 30 seconds. Stir. Microwave again for 15 second. Stir.
Dip one half of the doughnuts (I dipped top half since it is lighter than the bottom half and the bottom half looks amazing) into the chocolate shell.
Then put it back on to the wire rack. Leave them all about 30 minutes.
Then, put these in the freezer so the chocolate shell hardens. This shell is usually what is used for ice cream and it's "activated" and hardens when it touches something cold, like ice cream. It doesn't do the same with the doughnuts, so you need to help it out a little.
If this is worrying you, you can make a traditional glaze, but I like the look, taste, and feel of the chocolate shell.
